Indian cooking is incomplete without the spices and the masalas which lend it a specific flavor that distinguishes it from other cuisine. Garam masala is one such masala which provides a warm and pungent spicy fragrance to Indian cooking.
Garam masala is very popular and used a lot in Indian cooking but there are different ways of making this masala. While some cooks just mix cardamom, pepper, cumin, cinnamon, clove and nutmeg, other cooks also add fennel seed, coriander, mace and bay. Some of the Indian cooking involves roasting the spices before grinding it and in some this practice is absent.
It can be easily made at home and it blends in perfectly with a lot of food that is not the typical Indian cooking. It perfectly mixes on a duck breast, pork chop or a stew. For more recipes with garam masala it is recommended to try "My Bombay Kitchen" by Niloufer Ichaporia King.

Everybody loves to have some exotic Asian food once in a while. Most people in America seem to like Chinese food more than Indian food, but they are both very popular amongst the western populations.
In every China town, you can find a whole lot of Chinese food that is appealing to your taste and other senses. The sweet, sour, spicy, and whatever else taste you can find in them are simply an extravaganza.
On the other hand, you can find lots of Indian delis that have extremely interesting tastes. They are very appealing and yes, extremely-extremely-exotic. Indian cooking is known for the uses of the different types of spices available on the market. A cook said that he used more than 30 different spices in his curry.
However different these foods may be, you must agree that food from the East is both mouth watering and appealing.
